
The fasts have begun and it's time to prepare a delicious lean meal. Here's an idea for lean spaghetti, I experimented a bit and it turned out very tasty.
Ingredients (for 2 servings):
160 grams of spaghetti
40 grams of soy protein per granule
150-200 grams of oyster mushrooms
about 300 ml of soy yogurt
a handful of watercress leaves
a handful of kale leaves
half a bunch (2 stalks) of green onion
a little tarragon
a clove of garlic
salt to taste
a little oil or olive oil
Method of preparation:
You should pour boiling water over the soy protein granules and let them sit for 20-30 minutes, they will swell slightly. During this time, boil the spaghetti according to the instructions on the package, the ones I use are boiled for 10 minutes. Add a little oil to the water so that the spaghetti does not stick together.
For the sauce: Finely chop the onion, shallots and kale and sauté until soft, then add the finely chopped mushrooms (in this case, Kladnitsa) and stir occasionally until they are almost done. Add the soy yogurt (if you have vegan cream, it might be better to use that) and wait for the sauce to thicken slightly, then add the tarragon, the chopped garlic clove and salt. Wait a few more minutes for the sauce to thicken and we are done.
Place the spaghetti in a suitable plate and pour over the delicious vegan sauce.
